A healthy and seasonal snack or starter of sautéed padron peppers will brighten up any day.
Frying Peppers – Padron Peppers
1 pint of padron peppers per person
2 T olive oil
Coarse sea salt
Heat a large skillet over medium high heat. When hit add olive oil, allow it to heat up for a minute and toss in the padrons.
Sauté until the peppers are blistered on all sides, for a few minutes. Remove from the pan and sprinkle well with the salt and serve.
Be warned there is always one pepper that is bloody hot! Have some bread or dairy on hand to cool off.
