How do you like your nuts? I love salty and sweet and spiced nuts for snacks and to serve with cocktails. You can make these with cashews or walnuts or almonds even but the pecans are my favorite.
3 cups of pecans
6 Tbl unsalted butter
1/8 tsp cayenne or other chile powder, I used Aji Amarillo from Peru from Peppahead
1 piece of fresh rosemary or 1 tsp dried rosemary
3 Tbl raw or Demerara sugar
a few grinds of black pepper
Maldon or other sea salt
Melt the butter in a skillet and add all the ingredients except for the salt and the nuts. When the sugar is dissolved add the nuts and stir for 2-4 minutes. Remove the rosemary stem and pour onto a tray to cool. Sprinkle with Maldon or other sea salt to taste. You will need to taste quite a few to be sure.
Makes 3 cups of nuts, which is never enough.
