Bananas Foster is a classic New Orleans dessert, a decadent sauce of butter, brown sugar and boozy goodness. Serve over ice cream or serve over pancakes!
1/4 cup of unsalted butter or 1/2 a stick
1 cup of dark brown sugar
1/4 tsp cinnamon
1/4 cup amaretto liqueur
Pinch of salt
1/4 cup dark rum
4 bananas, cut in half lengthwise then in half crosswise
In a skillet, melt the butter and add the brown sugar and stir until melted. Add the cinnamon, salt, bananas and amaretto and cook, turning the bananas carefully, until the bananas are hot.
Then add the rum and ignite with the match or by tipping the pan over to allow the rum to flame from the gas stove. When the flame extinguishes, the sauce is done.
Serve over ice cream.
Note: For pancakes, slice the bananas crosswise into coins, then cook as above. Add the pieces of bananas to each pancake while baking on the griddle, and cover each piece of banana with a bit more batter.
Serve the remaining sauce over the pancakes for the ultimate breakfast.
