Ginger Garlic Noodles

Inspired by traditional Chinese garlic noodles and Momofuku ginger scallion noodles

Ginger Garlic Noodles

1 lb fresh Chinese egg noodles (or your favorite dry noodle)
3/4 c minced ginger
1/2 head garlic, separated into cloves and minced
2 bunches of green onions, minced
1/4 c sherry vinegar
1/4 c soy sauce
1/2 c grapeseed oil (or any non-flavored vegetable oil)
1 tsp Sambal or prepared garlic chili paste
1/4 c white sesame seeds
2 T Ponzu sauce (optional)

Boil the noodles in plenty of water with a tablespoon of salt, cook for 1 minute or per package directions.  Drain and rinse with cool water.

In a large bowl, mix together the remaining ingredients and add cooked noodles.  Mix well, preferably with  your hands and making lots of noise (see original post for a hilarious video).  Adjust seasonings if you want more heat, salt, etc.
