Roast Truffled Duck

Every year I buy a truffle stuffed duck from 4505 Meats and every year I forget to write down the directions for cooking it! Herewith for all posterity are the roasting directions.

Roast Truffled Duck

1 truffle stuffed duck from 4505 Meats
2 pounds Yukon gold potatoes
Salt and pepper
fresh thyme leaves

Preheat oven to 425 F.

Place a roasting rack in a pan and add the potatoes, then place the duck on the rack, breast side up.  Season with salt and pepper and the thyme.

Roast at 425 F for 30 minutes or until the duck measures 100 F.   Turn the heat down to 250 F and roast for 90 minutes more.

Remove the duck to a warmed platter and let rest.  Remove the potatoes from the duck fat in the roasting pan.  Strain off fat and save in a jar in the refrigerator.

Carve and serve with pan juices or 4505 Meats brandied peppercorn sauce.
