This is SF’s Le Central’s recipe for celeriac, purloined from the files of a society lady by a mutual friend during a house-sitting stint. The names have been omitted to prevent scandal. The salad is worth risking all.
Celeriac a Le Central
1 # celery root
3 T white tarragon vinegar*
1 T Dijon mustard
1/4 t salt
1 t lemon juice
Trim and pare celeriac under running water. Shred coarsely using julienne blade of Cuisinart. Mix dressing, toss, chill, covered. Serve mounded on a lettuce bed.
Definitely worth risking it all!!
How can i find white tarragon vinegar??
If you don’t see tarragon vinegar at the store, you can make some – this is what I do.
Stuff a few sprigs of fresh tarragon in a clean bottle, add a few peppercorns, a dried bay leaf and fill with white wine vinegar. Let the herbs macerate with the vinegar for at least a week before using.
You can add a pretty dried red chile as well or a sliver of garlic.
Bottles of this vinegar make a nice gift!
